Sundried Tomato, Feta and Basil Muffins

With my basil (okay… Rick’s basil ;-)) growing so beautifully, I was inspired to make some savory muffins featuring fresh basil – thought up this recipe from my basic muffin mix recipe and it worked very nicely.


Dry ingredients

  • 2 cups Flour
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda (Bicarbonate of Soda)
  • 1 tbsp sugar (optional)
  • 1 tsp salt

Wet ingredients:

  • 1 cup milk,
  • 2 eggs
  • +/- 50ml of the oily vinaigrette from the sundried tomatoes

To fold in:

  • 1/4 cup sundried tomatoes (in vinaigrette)
  • 1/4 cup crumbly feta cheese
  • handful of basil leaves (to taste)


  1. Combine dry ingredients in a mixing bowl and work through with a fork till well mixed
  2. Combine wet ingredients in a separate jug and mix well
  3. Add the wet to dry and mix till just combined (don’t overmix)
  4. Fold in the sundried tomatoes, feta and basil
  5. Scoop a 1/4 cup mixture in a lined muffin tin
  6. Bake for 20 mins in 180C oven (turning pan halfway through to ensure an even bake)
